School Holidays Day #7

Well, after another bad night (although no sickness, just lots of restlessness), and very swollen glands off William and I went to the Doctor first thing this morning. Throat infection diagnosed, and some antibiotics later, hopefully William is now on the mend. This evening he has been bouncing around the house, so obviously feeling a lot better. But he has gotten tired very quickly, so obviously not well yet, I just have to keep reminding him to take it easy. We also made an appointment with the dietician for him in a week or so, and I have a referral to a Paediatrician, I think the wait on him is long but thats ok, lets just get things started!

So I slept for about three hours after lunch, I was so tired and crabby I needed it. But I woke up with a headache and sore throat so I am hoping that I haven’t gotten what William has, but I am not holding my breath! It is all I need!

Jordan did lots of great work around the house, helping mow the lawn and using the whipper snipper so that is cool! He decided he wanted to cook so some scones this arvo, so I left him to it. You know, they were brilliant. So light, he didn’t over mix them at all! Well done! I only just managed to do an after photo because they were mostly eaten before they made it off the tray!

Totally yummy! I hope he makes a habit of making them!

Baking time!

Well it has been raining all day today, and although is has meant that everyone has been inside it is a lot cooler! So yay, I was able to do some baking. The kids wanted to join in so I wanted something quick and simple. What better recipe than the 100′s of Biscuits Recipe. I found the recipe originally over at Picklebums, and it is a gem! Thanks Kate!

Now unfortunately I let this kids add what they wanted to them, we divided it up and the kids went to it (hmmm sometimes I do wonder about the risks involved in this …)

They are filled with different combinations of choc bits, cornflakes, and currants ..

I wasn't quite so adventurous with mine! Just plain ol' currants!

Definitely love rainy afternoons! And because of the cool weather I have a Roast Chook in the oven … mmm mmm mmm!

mmm Gingerbread Men

Jordan wanted to make some gingerbread men, think he was a bit over cupcakes.I went a bit lazy this time though and bought a kit, but he had fun (and it was super easy!)

They came out pretty good, as you can see though we ended up being a bit creative with the shapes! Just the way we like to be!

Another week begins ..

I mentioned in the last post that I had not taken any photos this week, and hence I had not posted. Well I lied, lol .. I had taken photos and have back posted … click the links and you can see William cooking, and Thomas making costumes.

Today I had Thomas home, he is not as sick as Jordan and I think he will be fine for school tomorrow but it was a bit iffy there so I kept him home today!

One of the things I love the most is sitting back and watching the kids loving reading. It isn’t a habit that came naturally to them, we read every day, and I encourage as much as I can. I am always reading and always have atleast one book on the go and it is not unheard of for me to have a few. But both Jordan and Tom are really just starting to become bookworms, all it takes is the right book I guess.

When the kids are sick at home from school, they are only allowed limited TV, no computer or electronic games, so it is easy to fall back into reading ..

Yumm …

In another attempt to get William eating, I get him involved in cooking. Which he loves doing .. and no, he didnt eat them! If anyone has any hints on how to get a child that doesn’t eat, to eat, I am all ears (he goes beyond fussy, I am yet to find someone with as problematic child as William is!)

Another day in my Perfectly Imperfect Life

I won’t go into the explanation again, but if you pop on over to the Picklebums, you can see what its all about.

As I sit here at the computer, I can see our three-seater lounge covered in a huge mound of clean clothes that needs to be folded and put away. The floor in the kitchen needs sweeping and surfaces need to be de-cluttered. And yet, they are still waiting to be done!

I had two boys home from school today, both of them pulled the whole ‘cough cough .. I think I have your cold mum’, and then miraculously by 930am it had gone. They are not getting away with it tomorrow. But it did mean we had a nice day ignoring the housework ..

And I made some yummy choc-chip cookies, with extra almond meal to make them healthy (and of course of which William will not touch!), granted they look a bit like droppings, but are truly delicious ..

So yet again, I have not gained any awards in perfect house-keeping, but we had fun! Maybe tomorrow ….

Boys in the Kitchen!

My boys decided they were going to cook dinner and dessert tonight! They are getting so good with doing this sort of this thing!

Jordan decided he wanted cook Spaghetti Bolgnaise from scratch, and Thomas invented his own dessert. He designed it on paper first, and then made it for us :)

Baking Cookies

Yep .. did it again, baked our standard choc chip cookies … and again they have walked out the door. Literally, half of these cookies aways dissappear within the first hour of coming out of the oven! LOL .. but they are so scrummy. Today I kinda put them too close on the baking tray and almost ended up with one big cookie .. lol

And just because I love you all, this time I will include my recipe … it has been adapted from a Tollhouse Cookie recipe I found .. mind you, these days it is quite different .. but it was my starting point … I have tried to make them more wholesome to feed that fussy one in my family ..

So here goes … Kylie’s Kookies .. (how is that for a terrible name?? …. anyone got a better one?, I would love to hear it!)

250gm softened, but not melted, salt reduced butter (margarine doesn’t really work as well)

2/3 cup soft brown sugar

1/3 cup white sugar (I use castor but it doesn’t really matter)

3 eggs (it works with two, but I add a third for a bit of extra umph)

1 teaspoon vanilla esscence

1/3 cup wheat bran (not essential)

1/4 cup almond meal (not essential)

2 cups of plain flour (2 1/4 – 2 1/2 cups if no wheat bran added)

1 teaspoon bicarbonate soda

1 bag choc bits (I use white choc chips .. about a cup or so I guess)

1 cup chopped macadamia nuts (although any nuts will do, have also used m&m’s, cornflakes or ricebubbles would work as well)

Preheat oven to 190c

Cream butter and sugars with electric beaters (although I  have done it with a spoon at it works fine, just not quite as smooth)

Add eggs, beat after each egg.

Add vanilla, almond meal, wheatbran, flour, and bicarbonate of soda, mis with a wooden spoon.

Add nuts and choc-chips

The mixture will seem quite dry, this is fine. It also doesn’t matter if it doesn’t seem fully mixed.

Drop tablespoons of the mixture of lined baking trays, they spread so leave room!

Cook for about 10 minutes, until just golden brown and leave to cool on the baking tray for as long as possible .. they are quite soft.

Enjoy! and eat up quick, I can guarantee they won’t last long!
